I. The story
Every night, the kitchen chooses the other passage.
- ossia
- n., music. From the Italian, “or rather”. A second version of a passage, printed above the stave, that the player may choose instead.
Ossia sits in a 1920s piano showroom, two streets from Wigmore Hall. We kept the sprung oak floor, the brass rails and the tall north windows, and put one long hearth where the grand pianos used to stand.
Chef Elodie Marsh writes a new score each season from British farms, day boats and her own forager. The nine courses stay the same in shape. The kitchen plays its ossia, a different take on one course, every night, so no two services are quite the same.
